With apologies to the Beatles, my big project for the day was two batches of strawberry jam. My farmer friend at the local farmer's market strongly discouraged me from waiting 'til Tuesday to buy my flat of berries. He said that he figured that the strawberries were at peak and by Tuesday it might be too late. So today I made my jam. The variety of berry favored by Western New York farmers is Sparkle. It was a fairly dry spring, so the strawberries are smaller than average, but the flavor is amazing. The color is out of this world, too. Being that the fruit had a low moisture content, for the first time since I can remember, my fruit didn't float to the top of the jam. P.S.
