Tonight I made This cake . I've been wanting to learn how to make an excellent cake from scratch. I used the King Arthur brand cake flour specified and followed the directions to the letter. The cake ended up tasting pretty good but I'm not sure I liked the texture. It was much, much denser than the box mixes I usually make. The technique for this recipe involves using the mixer to cut the butter into the dry ingredients untill it resembles cornmeal, in the manner of making pastry. I think for my next attempt I'll look for a recipe in which has the sugar and butter are creamed together and then the dry and wet ingredients are added alternately. I am on a quest for the perfect cake recipe!
